Strawberry Shortcake


Over the weekend we bought some fresh picked strawberries from our local farm produce stand we like to shop at.  The berries came from a strawberry farm not too far away where they are picked each morning & delivered to some local markets the same morning.  They are delicious and we plan to visit the farm and pick lots of them ourselves for jam making.  Enjoy the recipe.  Once you try it, you'll never buy those preformed little shortcakes again.

Strawberry Shortcake

Cake
1-1/4 cup all purpose flour
3/4 cup sugar
2-1/2 tsp baking powder
1/2 tsp salt
1/3 cup butter, softened
2/3 cup milk
2    eggs
1    tsp pure vanilla extract

Toppings
Fresh Strawberries
Sweetened whipped cream

Heat oven to 400 degrees.  Combine all dry cake ingredients in mixer bowl.  Add all wet ingredients at once.  Beat at medium speed, scraping bowl often, until well mixed (1-2 min).  Pour into greased and floured 9" square baking pan.  Bake for 20-25 min or until lightly browned.  Cool completely.  Cut into squares.  Split each square in half, serve with strawberries and whipped cream.  Serves 9
