Kale Chips

Last Friday I cut a lot of kale from the garden.  Some of it will be cooked down with caramelized onions and garlic (my fave), but I wanted to make a little treat with some of it as well.  I came across a recipe for kale chips with lemon essential oil so I decided to give it a try.

You'll need:
Kale ~ a couple large hands full, washed and cut to roughly the same size
2 Tbsp Olive Oil
2 Drops Lemon Essential Oil
Salt & Pepper

Kale is cut, washed & dried

Combine olive oil & lemon essential oil in large bowl
Toss kale in bowl and massage oil onto both sides of each leaf until completely coated

Place kale in a single layer on parchment lined baking sheets
Sprinkle with salt & pepper

Bake in 200 degree oven for about 45 min, watching to be sure chips don't burn.  After about 45 min, I turned my chips over and baked for another 5 min or so.  You want them to be crispy, not leathery.

Pour into bowl or onto plate and enjoy.  They are delicious! 
If there are any leftovers, store in a ziploc bag or airtight container.

  1. Hi Bettie, I came by to return the blog visit and thank you for taking the time to leave a comment on mine. Kale is a great cooler weather veggie for us, but so far my recipe options have been pretty limited. Kale chips sound great! I will definitely have to give them a try some time.

    1. Hi Leigh, The kale chips really were a great little snack and easy to make. They may actually be something you could try making in your solar oven too. The onions & kale make a great side dish too so you wouldn't even have to make the pizza to enjoy them. Btw, I just received your book yesterday, can't wait to read it!

  2. We use kale quite a bit in soups and salads. It is really good for you. I will have to try the kale chips!

    1. Karla, the kale chips are really good, but do take a little while to make. They're a nice treat though! I like kale in smoothies as well. A little water, kale, frozen strawberries & frozen bananas....yum!
